Fried Rice

1 - 2 green onions, chopped
2 eggs
1 tsp salt
1 tsp pepper
4 C cooked rice
1 - 2 Tbsp soy sauce or oyster sauce

Mix salt and pepper with eggs and beat lightly. Heat a pan, add oil, and scramble egg until cooked but not dry; remove from pan and set aside. Add more oil to the pan and stir-fry the rice until warm through and slightly sticky. Mix in soy sauce or oyster sauce. Mix in eggs and green onion. Serve warm.
*To add a meat (ham, chicken, beef, pork, etc.) to the rice, chop 1 cup meat into bite-sized pieces. Stir-fry before the egg, remove from pan and set aside. Add it back in with the eggs.
**To add frozen vegetables (peas, carrots, etc.), add it in at the same time you are stir-frying the rice.
