Summer Lasagna

1 lb ground beef or sausage
1 med onion chopped
1 green bell pepper chopped
1/4 cup carrots, finely chopped
2 cloves garlic, minced
1 (15 oz can) tomato sauce
1 tsp dried oregano
1/2 tsp dried basil
salt & pepper to taste
5 medium zucchini or 3 summer squash, peeled and sliced length-wise into thin strips
1 cup cottage cheese
1 egg, beaten
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese

1. Preheat oven to 350 degrees. Lightly grease 9 x 13 baking dish.
2. In a skillet or saucepan over medium heat, cook ground beef or sausage until evenly brown. Remove meat and drain juices. Mix the onion, pepper, carrots, garlic in same pan and saute until onion and garlic are warm, add the cooked meat and tomato sauce.  Season with oregano, basil, salt, and pepper.  Bring the mixture to a boil, reduce heat to low, and simmer for 10 minutes, until vegetables are tender.
3. In the bottom of the prepared baking dish, layer 1/2 of the zucchini or squash. In a bowl, beat together the cottage cheese and egg, and spread over the squash. Scoop 1/2 of the beef mixture over the cottage cheese and sprinkle with 1/2 of the mozzarella cheese. Layer with remaining squash, beef mixture, and mozzarella.  Sprinkle Parmesan cheese on top.
4. Bake for 45 minutes in the preheated oven.  Allow to sit for 10 minutes to set before serving.
